Thai rice pudding

Yummy! Here we have for you some exotic flavours for your kitchen.
Are you bored with what you've been eating at breakfast-time or is it becoming repetitive?
To escape the breakfast cereal cycle we propose an alternative.
Why not try this speedy option only requiring 10 minutes to prepare.
We encourage you to top this pudding you with your favourite fruits and if you want a little extra sweetness just add agave or date syrup.

Serving for 2 people

Ingredients:
400ml soya milk or any non-dairy milk
1/3 cup barley flakes
1 lemon grass
1/3 tin coconut milk
pinch of salt
For serving fresh fruit

Method:
Boil milk with barley flakes. Add lemon grass (before you will use lemon grass squeeze them in your fingers to get aroma). Boil for 5-7 minutes until the mixture is thick. Add coconut milk and a pinch of salt. Serve with fresh fruits.
