Tomato sauce which is perfect for home-made pizzas it is very easy and delicious. It's made with just a few ingredients — canned tomatoes, garlic, onion, and a drizzle of olive oil — and a quick blitz in the blender or food processor. You can even freeze it in single pizza-sized portions to make things all the easier for yourself on Pizza Night!

Ingredients:

2 cloves garlic, peeled and finely sliced
1 bunch
fresh basil leaves, picked and torn (if it not available do not worry you can
add any herbs you like I prefer rosmary)
2 x 400g
good-quality tinned plum tomatoes
sea salt

Method:
Place a
large non-stick frying pan on the heat and pour in 4 generous glugs of olive
oil. Add the garlic, shake the pan around a bit and, once the garlic begins to
colour lightly, add the onion and slowly cook for another 10 minutes.
Add basil leaves and the tinned tomatoes. Season the sauce with salt and pepper. As soon as it comes to the boil, remove the pan from the heat. Pour the sauce into the food processor and wiz until fully blended.

sauce back into the pan, bring to the boil, then turn the heat down and simmer
for 5 minutes to concentrate the flavours.

Store the sauce in a clean jar in the fridge – it’ll keep for a week or so.
